FALL IN LOVE WITH WELLNESS: Easy Pomegranate Parfait Recipe

One of my favorite ways to nourish both body and soul is by incorporating seasonal ingredients, like the vibrant and juicy pomegranate, into easy, wholesome recipes. This delicious fruit is not only packed with antioxidants but also adds a splash of color and joy to any dish. Join me in savoring the simple pleasure of cooking and nourishing ourselves with foods that help us feel happy, healthy, and connected to the season's rhythm. Let's make this fall about enjoying each moment and taking care of ourselves from the inside out.



HAVE A FRESH START EVERYDAY!


PREP TIME: 15 mins

SERVINGS: 2 people


INGREDIENTS:

1 cup water, 4 tsp chia seeds, 2 cups cashew milk yogurt (or your choice), 1/2 banana, 4 dates, 1 cup granola, 1/4 cup of pomegranate.


TIP:

In order for chia seeds to sprout, you will need to place it in water for a few minutes. Otherwise you can sprinkle the seeds into your parfait to enjoy a grainier texture.




HEALTH BENEFITS:


Pomegranate is loaded with nutrients. This superfood is powerful and supportive to the body. It helps remove free radicals, protects cells from damage, improves memory, reduces heart disease, is used as a remedy for diabetes in parts of the world. It has three times more antioxidants than red wine or green tea... so serve up, no guilty pleasure here!



Here’s how to do it:

  1. Place the chai in water and let it soak a few minutes.

  2. Next, strain excess water from the chia.

  3. In a blender place yogurt, banana, dates and blend until smooth.

  4. In a bowl mix the chai into the yogurt blend.

  5. Seed the pomegranate.

  6. Place half of the granola and pomegranate into a glass.

  7. Pour the yogurt mix over the granola.

  8. Add the rest of the granola and pomegranate onto the top.

  9. Walla, your parfait is served in style!


You can never go wrong with adding more toppings and you can always enjoy this classic recipe with any twist. Try it with cranberry sauce or pineapple orange, or what ever topping your taste buds ask for. This healthy recipe is versatile, simple and oh so delicious!
